    The stone milling of our flours preserves all the organoleptic properties so that we obtain a product with an irregular grain size, which guarantees a more intense taste and scent. Since 2013,we took part in a project called “Nutrigran Bio” with the University of Perugia, “Aiab” and “Parco 3A” which considered the retrieval and the experimentation of very ancient cereals varieties such as monococcum spelt and ancient soft grains of the early ‘900. Our soft wheat flours are a blend of Verna and Gentilrosso varieties that despite the gluten deficiency, give a strong taste and olfactory characterization.
