The borlotti beans of Poggio Aquilone have been known and used since ancient times for a healthy diet. Its delicate flavor makes it particularly suitable for any type of dish.
Soak for 2 hours in warm water and cook in water boiling for about 1h.
Pack of 500 g in a protected atmosphere.

Nutritional properties
Beans are a very nutritious food and, like all legumes, they are a good source of vegetable protein. The proteins contained in legumes do not constitute, however, by themselves, a substitute complete with the proteins contained in meat (the so-called proteins noble), but they can increase their nutritional properties if associated, for example, with cereals. Beans are rich in fiber, so they have a laxative effect, useful in case of constipation and hemorrhoids. They also contribute to lower cholesterol, triglycerides and even blood sugar, and they are therefore indicated in cases of diabetes.

Borlotto Beans all’uccelletto

Ingredients for 4 people

Method

  • 300 grams Borlotti beans
  • 2 cloves of garlic
  • 180 grams Tomato puree
  • 5 Sage leaves
  • 1 loaf
  • Salt and Pepper To Taste
  • Extra virgin olive oil to taste

Soak the borlotti beans in warm water for two hours, then boil them in a large pot covered with water for fifty minutes. Skim them hand by hand. 

Once cooked, drain them. Fry two previously peeled garlic cloves. Once browned, remove the garlic and add the beans and chopped sage. Add the tomato puree and season with salt and pepper, cook for 10 min. Meanwhile, cut the bread into slices and heat it on the plate. 

Place the beans in the center of a plate, place the slice of bread on top and finish with two sage leaves.
