The pearl barley of Poggio Aquilone is a cereal rich in beneficial, tonic, digestive, emollient and refreshing properties; it has a significant fiber content, and a low glycemic content. Among the various types of barley, it stands out for being free of bran and husks. Therefore it is without external coating and therefore has a color tending towards white.

Nutritional properties

This cereal is rich in mineral salts especially phosphorus. Then we find iron, calcium, potassium, magnesium, zinc and silicon. Among the amino acids we mention niacin, thiamine, riboflavin, it is also rich in vitamin A, vitamin C and vitamin E. It helps to counteract constipation and reduce the sense of swelling. It also offers relief in case of inflammation, acts directly on the bone mineralization process, strengthens nails and hair and also counteracts skin aging. It also strengthens the immune system and has an antioxidant action. Also excellent for breastfeeding women, having galactogenic properties

Barley meatballs

Ingredients for 4 people

Method

  • 150 g of pearl barley
  • 2 eggs
  • 1 zucchini
  • 50 g of soft cheese such as Emmenthal or a smoked scamorza
  • Basil
  • Mint
  • 2 tablespoons of Parmesan
  • Breadcrumbs to taste

Take the zucchini and cut it into cubes and fry it with a drizzle of oil and salt. Put the barley to boil and when it is ready drain it well. Then add to the zucchini. Take a large bowl and pour the two tablespoons of Parmesan cheese, along with salt, pepper, mint and basil. Add the barley with the zucchini and then 1 egg. 

Mix everything well and set aside. Take the cheese and cut it into small pieces. In another bowl, beat the egg and then prepare the breadcrumbs. Start making meatballs: using a spoon, take a little barley with the vegetables, insert the cheese in the middle and then close forming a ball. Dip the meatball in the egg and then roll it in the breadcrumbs. 

You can fry them in oil or, if you prefer healthier cooking, put them in the oven at 180 degrees for 20 minutes. Enjoy your meal!
